Penghan Zhang, obtained his master degree of food technology from Gent University and KU Leuven (Belgium) and bachelor degree of analytical chemistry from Hogeschool Zeeland (Netherlands), participates this exciting project as an analytical specialist. He will develop advanced analytical methods, on both qualitative and quantitative manners, for wine aromas profiling and specific aroma monitoring on the basis of GCxGC–TOF and GC–MSxMS. Aroma fingerprints of fermentations with different yeasts will be revealed. Flavor contribution of identified volatile compounds will be assessed with GC-Olfactometry measurements and sensory tests.
